Beet the Bloat Smoothie

Shocking nutritionist confession: I don’t like beets.  I know, I know, they’re just so healthy and colorful but I am just not that into them except in crunchy chip form.  Mmm I love a good Terra Chip.  Clearly I should love them because they taste like the earth but you can’t love all healthy stuff, right?  Well wrong!  I experimented with blending them up in smoothie form mixed with fruit and ginger and I finally found a way to beat well, that beet taste.

For another edition of Thirsty Thursday, banish that bloated feeling with the superfood duo of beets and ginger.  The ripe-red blend combines fiber-rich beets and berries with sweet pineapple to balance out the flavors.  If you’re wondering what to do if you don’t own a high speed blender, let me beat you to the answer: Boil or microwave the raw beets first or you can buy a brand like Love Beets which are cooked organic beets that are ready to eat or blend!

One more fun piece of information about me and beets if you are still reading this.  Burak means beet in Polish!  Can you believe that?  When I told my in-laws I didn’t like beets, they were like your last name is a beet so you better beat liking beets into your diet!  Well guess what Anna and Eddie, I can eat a Burak, I mean a beet, but in smoothie form!  Thank goodness I had to come up with 100 original smoothie recipes for my new book Slim Down with Smoothies because even I learned how to incorporate foods I don’t particularly like into my healthy diet.  Phew. Now life can go on.  This Burak likes beets now.

Ingredients
  

  • 1 cup unsweetened vanilla almond milk
  • 1 small beet cubed or 1 cup frozen
  • 1 cup frozen mixed berries
  • 1 cup frozen pineapple
  • 1 cup baby spinach or kale
  • 3/4 cup plain low-fat Greek yogurt
  • 1 tbsp chia seeds
  • 1 tbsp fresh ginger or 2 tsp ground ginger

Instructions
 

  • In a blender, combine all the ingredients and blend until the desired consistency is achieved. Add more liquid as needed. Serve immediately.
