ALT Toast (avo lox tomato)

Move over, BLT. Meet the ALT: Avocado Lox Tomato Toast.

This is one of those ridiculously simple meals that barely qualifies as a recipe which, if you know me, is exactly the kind of food I love. A few flavorful ingredients, a couple of minutes, and you have a meal that feels a little fancy but requires almost zero effort.

Creamy avocado, salty smoked salmon, and a good piece of crunchy toast come together for an easy breakfast, lunch, or anytime meal.

Why I Love This Combo

Besides being delicious, this toast gives you a nice mix of protein, healthy fats, fiber, and satisfying carbs.

The smoked salmon provides high-quality protein along with omega-3 fatty acids, while avocado adds heart-healthy unsaturated fats and fiber. And yes, we’re keeping the toast because carbs are never the enemy, and a good quality whole-grain or seeded bread adds even more fiber, happiness and staying power to a meal.

You don’t need a dozen ingredients, a complicated recipe, or an hour of meal prep to put together something nourishing.

Make It Your Own

Use whatever bread you love and whatever toppings you have hanging around. Add an egg if you want even more protein, pile on some cucumber or tomato for extra crunch, or sprinkle on everything bagel seasoning when you’re craving those classic bagel-and-lox vibes.

And if you’re thinking, Why not just eat a bagel with lox? You absolutely can. This isn’t about making a “healthier” version of something you love. It’s simply another easy way to combine foods that taste good, offer plenty of nutrition, and keep you satisfied. I just happen to prefer toast because it’s crunchier!

ALT Sandwich (avo lox tomato)

Servings: 1

Ingredients
  

  • 1/4 Avocado ripe
  • 3 slices Smoked salmon (lox)
  • 3-5 Cherry Tomatoes
  • Sprouts
  • Crunchy Salt
  • Fresh ground pepper
  • Squeeze of lemon
  • 2 pieces grainy toast such as Ezekiel or Dave's Killer

Equipment

  • 1 toaster
  • 1 knife
  • 1 cutting board

Method
 

  1. Toast bread to your liking.
  2. Add ripe avocado to each slice and mash with a fork.
  3. Top with smoked salmon, sprouts, cherry tomatoes.
  4. Add crunchy salt and ground pepper.
  5. Squeeze lemon on top to finish.

This recipe was calculated using 2 slices of thin-sliced Dave’s Kill Bread and has ~290 calories, ~19 grams of protein and ~8 grams of fiber.
